Potbelly Corporation is an American sandwich chain founded in 1977. It has more than 400 locations in the United States. The company is headquartered in Chicago, Illinois.

Peter Hastings, who had worked at a few different sandwich shops, founded Potbelly in 1977 after he grew tired of having to go to different places for lunch. He opened the shop with the help of his friend, Bryant Keil.

The first location was at 116 North Wabash Avenue in Chicago, Illinois. The company’s name comes from the potbelly stove, a type of cast-iron stove with a rounded belly.

In 1996, after several years of operating Potbelly as a single location, Hastings and Keil brought in two new partners: Aylwin Lewis and Penny Pritzker. The three of them began to grow.

The original Potbelly menu featured sandwiches such as the “Hot Ham ‘n’ Cheese” and the “Roast Beef”. There were also soups and salads available, as well as desserts such as shakes and malts.

The company began to franchise in 1999. In 2001, the company was acquired by McDonald’s Corporation but remained a subsidiary. In 2007, Potbelly was spun off from McDonald’s and became a publicly-traded company on the NASDAQ stock exchange.

In 2013, the company opened its 400th location. As of 2017, Potbelly Corporation operates more than 400 restaurants in the United States.
