Qdoba Mexican Grill is a chain of fast-casual restaurants in the United States, Canada, and Mexico. It is based in Denver, Colorado, and was founded in 1995 by Anthony Miller and Robert Hauser.
The company’s name is a portmanteau of “queso” and “doble” (Spanish for “cheese” and “double”, respectively). Qdoba began as Zuma Fresh Mexican Grill in 1995 in Denver, Colorado.
In 1997, the company was purchased by Jack in the Box, which rebranded all of the restaurants as Qdoba Mexican Grill the following year. In 2003, Qdoba was spun off from Jack in the Box and became a publicly-traded company.
The company’s first location outside the Denver metropolitan area was opened in 2003, when a store co-located with an existing Checkers Drive-In in Orlando, Florida.
Qdoba added additional non-traditional locations over time, including several co-locations with Chick-fil-A and stand-alone units at universities throughout the United States.
